Shoshana Ginsburg

Shoshana Ginsburg, Zuckerman Postdoctoral Scholar at the Technion – Israel Institute of Technology, presented a poster  at the AOCS Annual Meeting and Expo  in New Orleans. Her research explores the advantages of plant-based butters made from  avocado and coconut oils.  The resulting gels produce a plant-based butter that closely resembles bovine butter in structure and performance, is more environmentally friendly and may lower the risk of cardiovascular disease. Dr. Ginsberg’s research in lipid chemistry and food materials engineering aims to support more sustainable food design and improve the texture and functionality of  butter alternatives.
